Cook it Raw 2010: 16 Chefs go to Lapland
The cooking frontier just got wider with foraging in the Finnish Polar Circle plus reindeer slaughtering and sausages
San Francisco-based chef Daniel Patterson has a reputation for pushing the boundaries when it comes to exploring tastes and flavours. Perhaps it is unsurprising then, that the founder of Coi was one of 16 chefs to be found foraging in Finnish Lapland earlier this year on a four-day expedition organised by René Redzepi for the third edition of Cook it Raw. (Patterson also hosted the first US event for Redzepi's NOMA book tour in October).
In the rare moments he is not experimenting in the kitchen, Patterson can be found walking the streets of his home city. His top tips for visitors to San Francsico? 'Have a Gilbraltar (a macchiato with more milk) at Blue Bottle Coffee. And have a piece of cake, at their rooftop cafe in SFMOMA. Don't drink Starbucks - there's too much terrific local independent coffee here. And don't forget to curb your wheels. You WILL get a ticket.'
