Following in the walking boot-steps of two successful previous expeditions (to Denmark and Italy in 2009 and early 2010), the third Cook it Raw event saw some of the world's most intrepid chefs working today converge on the wilderness of Lapland for a weekend of foodie foraging. 

Inspired by the 2009 Climate Change Conference, the Cook it Raw initiative was founded in order to celebrate a concept: rawness as a culinary technique and a meditation on nature - and to provide an opportunity: to explore the boundaries between cutting edge contemporary cooking and the natural world. Cook it Raw has attracted some of the biggest names in the industry, including René Redzepi (whose restaurant, Noma, provided a base for the first event), David Chang, Alex Atala and Albert Adrià.
