Meal times have got interesting with easy and varied cold soups
Over here in the UK the weather hasn't quite decided if it's summer yet, and it's tricky knowing what to wear - we're having to keep sunglasses and an umbrella on us. With sporadic rain and a nip in the air it's also confusing when it comes to food, a steaming broth is too much and a salad not enough. We've decided the perfect comprise is a chilled soup.
There are far more cold soups than the well-known gazpacho, and Mint blog author Ellie Snow has collated some of the best recipes to try, including Honeydew, Mint, and Lemon Thyme Soup and Chilled Corn and Golden Beet Soup.
